Ingredients
Cake
125g margarine
250ml sugar
3 eggs
500ml cake flour
15ml baking powder
10ml grated orange rind
Juice of one orange or 125ml orange juice
50ml sherry (optional)
Icing
60g margarine
10ml grated orange rind
Juice of one orange or 100ml orange juice
25ml sherry (optional)
Method
Cake
- Preheat oven to 180°C.
- Beat margarine and sugar together.
- Add eggs one at a time, beating well after each addition until light and fluffy.
- Sift dry ingredients together.
- Mix grated orange rind, orange juice and sherry.
- Add liquid and dry ingredients alternatively to creamed mixture.
- Pour into a well greased ring cake tin and bake for 45 – 50 minutes.
- Allow cake to cool for a few minutes before icing.
Icing
- In a saucepan bring all the icing ingredients to a boil, remove from heat and pour over cake.
