40ml oil
3 cloves of garlic, crushed
1 onion, sliced
5ml ginger, freshly grated
2 – 3 dried chillies, soaked in warm water
250g button mushrooms, sliced
250g black mushrooms, sliced
30ml soy sauce
125ml orange juice
5ml corn flour
250g chinese egg noodles, cooked
100ml roasted peanuts
  • Heat the oil in a large frying pan or wok.
  • Add the onion and stir-fry for a minute, add the garlic, ginger and chillies, stir-fry for a further minute.
  • Add the mushrooms and stir-fry for 2 – 3 minutes, until just cooked.
  • Mix soy sauce, orange juice and corn flour together, add to the pan stir for a minute until thickened slightly.
  • Season to taste with salt and black pepper.
  • Serve on a bed of Chinese noodles and sprinkle with roasted peanuts.
  • Garnish with fresh basil.
