1 can (440g) chickpeas
1 can (440g) lentils
250g cherry tomatoes, finely diced
¼ cucumber, finely diced
2 celery stalks, finely chopped
1 onion, finely diced
30ml fresh parsley, chopped
Salt & freshly ground black pepper
80ml salad dressing of your choice.
- Drain the chickpeas and lentils and rinse them under cold running water.
- Mix all the ingredients together and season to taste with salt & freshly ground black pepper.
