1 tin coconut milk
1 packet green curry paste
200g broccoli, broken up
200g green beans, halved
4 baby marrow’s, sliced
10 baby sweet corn, halved
100g plain cashew nuts
small bunch fresh coriander, chopped
Method
- Pour the coconut milk and green curry paste into a pot.
- Gently heat over a low heat stirring continuously.
- Add the vegetables and cook over a low heat until the vegetables are al dente.
- Serve on a bed of basmati rice or noodles, garnish with cashew nuts and a sprinkle of coriander.
