500g macaroni
Cheese Sauce
140 butter
140g flour
1,25 litres milk
160g cheddar cheese, grated
140g blue cheese, crumbled
140g parmesan cheese, grated
2ml mustard powder (optional)
salt and freshly ground black pepper
Method
Pasta
- Boil the macaroni in salted water until al dente, drain and set aside.
- Melt the butter in a saucepan over a medium heat.
- Add the flour, stirring to make a roux.
- Add the milk gradually, stirring until the sauce thickens and is done.
- Season with a little salt and pepper to taste.
- Add the cheese, mustard, salt and pepper – Remember cheese is salty so be careful when adding salt.
- Place the cooked macaroni into a large oven dish and pour the sauce over.
- Bake in a preheated oven at 180°C for about 15 minutes or until it starts turning golden brown.
- Serve with a green salad.
