BROCCOLI SALAD

This free fresh Broccoli Salad is delicious! Broccoli is packed with many vitamins and full of fibre, which is great for weight loss! Quick & easy to make, great to serve as a side dish at a braai or BBQ.


Ingredients


The dressing:
1 cup mayonnaise
2 Tblsp sugar
3 Tblsp vinegar


Salad:
3 cups broccoli
¼ cup sunflower seeds
250g bacon, diced
1 small onion, chopped


Method


Fry the diced bacon until crispy and set aside.
Fry the sunflower seeds in the same pan, not too much or they will taste burnt.
Cut broccoli into bite-sized pieces.
Combine all salad ingredients into a salad bowl.
Mix all the dressing ingredients and pour over the salad, mix gently and refrigerate before serving.


Serves 2

TUNA RICE SALAD

Ingredients


180g rice
15ml savoury rice seasoning
340g tuna
150ml light yoghurt & herb salad dressing
50ml tangy mayonnaise
15ml chopped dill, finely
¼ red pepper, cubed
¼ yellow pepper, cubed
2 Tblsp fresh coriander, chopped
1 handfull fresh rocket for garnish
5ml lemon pepper


Method
  • Cook the rice and stir in the savoury rice seasoning.
  • Mix all the remaining ingredients together and add to the cooked rice, mix well and serve.
Serves 4

SHRIMP & AVOCADO SALAD

Entertaining guest and looking for something different to serve as a starter? This delicious free Shrimp & Avocado Salad will make a perfect light starter!


Ingredients


400g jumbo shrimps (cooked)
200ml mayonnaise
30ml tomato sauce
60ml spring onions, finely sliced
5ml lemon pepper
60ml celery, finely chopped
15ml dill, finely chopped
320g farfalle or spiral pasta (cooked)
1 avocado, peeled & sliced
30ml lemon juice
1 packet rocket
4 eggs boiled and quartered


Method
  • Mix the shrimps, tomato sauce, mayonnaise, spring onions, lemon pepper, celery and dill together.
  • Add the pasta and mix well.
  • Pour the lemon juice over avocado.
  • Place the rocket at the bottom of 4 small starter plates, followed by the shrimp and pasta mixture.
  • Place the eggs on top of the salad and serve.
Serves 4

TUNA & BEAN SALAD

This awesome free Tuna & Bean Salad Recipe is a lovely side dish to serve at a braai or BBQ… Very quick and easy to make! Full of fibre, super healthy and great for weight loss!


Ingredients


2 x cans (175g each) tuna in brine 
1 can (410 g) butter bean or red kidney beans 
1 can (410 g) chickpeas 
60ml fresh herbs 
20 ml olive oil 
Salt and freshly ground black pepper 
1 red or green pepper, diced 
1 small onion, diced
2 stalks celery, finely sliced
handful of fresh parsley to garnish 
125ml hummus


Method
  • Drain the tuna, butter beans or kidney beans and chickpeas.
  • Rinse the beans and chickpeas under cold water.
  • Mix the tuna, beans and chickpeas together in a salad bowl.
  • Stir in the fresh herbs, oil, salt and pepper.
  • Add the red or green pepper, onion and celery to the tuna mixture.
  • Season to taste, garnish with parsley and serve with hummus and fresh bread or as a side dish.
Serves 4

QUICK THREE-BEAN SALAD

This free Three-Bean Salad Recipe is rich in fibre and is so quick and easy to make! An awesome side dish to serve at a South African braai!


Ingredients


300g green beans, tailed
1 (410g) can baked beans
1 (410g) can kidney beans, drained and rinsed
60ml chives, chopped or spring onions
2 Tblsp mayonnaise or plain yoghurt for the healthier option
1 pinch salt and freshly ground black pepper
3 Tblsp white balsamic vinegar


Method
  • Blanch green beans in boiling water until just cooked but still crunchy and rinse in iced water.
  • Mix the baked beans, kidney beans, chives, mayonnaise and balsamic vinegar together.
  • Season and toss through the green beans. 
Serves 6

BILTONG & AVOCADO PASTA SALAD

This free Biltong & Avocado Pasta Salad is absolutely delicious… Great to serve as a side dish at a braai or BBQ! Feel free to add some feta cheese…


Ingredients


300g pasta spirals
30ml olive oil
1 onion, finely chopped
1 green pepper, diced
1 yellow pepper, diced
50ml marinated sun-dried tomatoes, sliced or cherry tomatoes halved
100g beef biltong, sliced
1 tub of biltong dip or sour cream
1 ripe avocado pear, peeled & cubed
fresh parsley to garnish


Method
  • Boil pasta in salted water until al dente.
  • Drain and add the olive oil and toss to coat.
  • Add the onion, peppers, tomatoes, biltong and dip and toss to coat.
  • Refrigerate until ready to serve.
  • Peel and cube the avocado only once you are ready to serve the salad.
  • Sprinkle the avocado with a little lemon juice to prevent it from turning brown and add to the pasta salad.
  • Garnish with parsley
Serves 4 - 6

LENTIL & CHICKPEA SALAD

This Free Lentil & Chickpea Salad Recipe is awesome… Feel free to substitute any of the ingredients…Jazz this salad up a little by adding some pitted olives, sun-dried tomatoes, nuts and feta cheese.


Ingredients


1 can (440g) chickpeas
1 can (440g) lentils
250g cherry tomatoes, finely diced
¼ cucumber, finely diced
2 celery stalks, finely chopped
1 onion, finely diced
30ml fresh parsley, chopped
Salt & freshly ground black pepper
80ml salad dressing of your choice.


Method
  • Drain the chickpeas and lentils and rinse them under cold running water.
  • Mix all the ingredients together and season to taste with salt & freshly ground black pepper.
Variation: Pitted olives, sun-dried tomatoes, nuts and feta cheese.

BACON & POTATO SALAD

This free Bacon & Potato Salad is amazingly tasty… The bacon makes this potato salad highly addictive & the sour cream makes its super creamy! Serve as a side dish at a braai or BBQ or with any meat of your choice.


Ingredients


500g potatoes
30ml cooking oil
1 small onion, finely chopped
300g bacon, chopped
100ml sour cream
handful fresh chives
salt & freshly ground black pepper to taste


Method
  • Cook the potatoes in boiling salted water until soft, drain and set aside.
  • In a large frying pan, heat the oil and fry the onion until just soft.
  • Add the bacon and cook until done, stir in the sour cream and remove from heat.
  • Peel and cut the potatoes into small cubes.
  • Toss the bacon mixture, potatoes and chives together.
  • Season to taste and serve hot.
Serves 4

MORROCAN CHICKEN COUSCOUS SALAD

Ingredients

6 chicken breast fillets
20-40ml Cajun or Moroccan spice
salt and freshly ground black pepper
juice of 1 small lemon
30g butter
4 cups cooked couscous
60ml chopped fresh parsley, coriander and mint

½ red pepper, seeded & diced
6 spring onions, finely sliced
200g feta cheese, crumbled (optional)


Method
  • Rub the chicken breasts with the Cajun or Moroccan spice.
  • Season with salt, freshly ground black pepper and lemon juice and leave to marinate in a glass dish for a few minutes.
  • Heat the butter and fry the marinated chicken until done. Set aside.
  • Mix the couscous, fresh herbs, spring onions, red pepper and feta cheese.
  • slice the chicken and toss with the couscous mixture.
  • Drizzle with extra lemon juice and moisten with olive oil if necessary.
Serves 4 – 6

CURRIED CARROT SALAD

Ingredients

1 kg carrots
500g onions
100g cashew nuts (optional)
2 cups litre white vinegar
2 cups sugar 
½ cup seedless raisins
1 tsp salt
2ml black peppercorns
25ml cornflour
25ml curry powder
 
Method
  • Peel the carrots and slice thinly.
  • Cover the slices with water and boil till just soft.
  • Peel and halve and slice the onions thinly.
  • Cover the onions with boiling water and leave to stand for 15 minutes.
  • Drain the carrots and onions.
  • Add the white vinegar, sugar, raisins, salt and black peppercorns to the vegetables and bring to the boil.
  • Mix the corn flour and curry powder with 125ml water.
  • Add the curry mixture to the carrot mixture and boil for about 10 minutes. Stir occasionally. Spoon the hot curried carrots into clean hot jars and seal immediately.
  • Add cashews nuts only when serving.

CURRIED BAKED BEAN SALAD

Ingredients

1 onion sliced into rings
1 green pepper julienne
2 carrots julienne
2 cans baked bean in tomato sauce
2 Tblsp curry powder



Method
  • Fry onion rings until light brown
  • Add the green pepper and carrots and fry for 5 minutes
  • Add the curry powder and baked beans and simmer for 5 minutes

    Can be served hot or cold, really nice for a braai/ barbeques
