Ingredients
1 packet tennis biscuits, crushed
2 heaped Tblsp butter
1 Tblsp gelatin
½ cup cold water
1 tin condensed milk
1 tub cream cheese
1 tin crushed pineapple
125ml fresh cream
Maizena to thicken
80ml lemon juice
Method
- Mix tennis biscuits and butter together and press into a dish.
- Prepare all ingredients before starting.
- Sprinkle gelatin into half a cup of cold water, stand cup in hot water to melt it.
- Take the condensed milk, lemon juice, cream cheese, gelatin mixture, half the tin of pineapple and the cream, beat together until stiff.
- Pour mixture into the dish and leave to set.
- Place the remaining pineapple into a saucepan to boil and thicken with maizena, cool off and pour over cheesecake before it sets. Refrigerate to set.
