Ingredients
2 tblsp oil
1 onion, sliced
50g green curry paste
750g lean beef strips
1 green pepper, sliced
2 x 400ml coconut milk
2 tsp sugar
1 tsp fish sauce
1 tblsp soy sauce
1 green chilli, chopped
¼ cup fresh basil, chopped
¼ cup fresh coriander, chopped
Method
- Heat oil, add onion and curry paste and cook over moderate heat for 4-5 minutes.
- Add beef and continue to stir-fry for 2-3 minutes.
- Add the coconut milk and bring to the boil, stirring continuously.
- Reduce heat, add sugar, fish sauce and soy sauce, simmer for 30 minutes or until meat is tender.
- Add green pepper, chilli, basil and coriander, stir well.
- Cook for a further 10 minutes before serving.
- Serve with rice.
