MUTTON CURRY BUNNY CHOW

Have a taste of Durban with this Free Traditional South African Mutton Curry Bunny Chow. Bunny Chow is hollowed out bread filled with curry. You may use any curry to make a bunny chow. In this recipe I have used mutton which makes a divine juicy curry. Bunny chow is a very messy meal to eat so be prepared to get your hands dirty as the traditional way to eat a Bunny Chow is with the hands!


Ingredients

1kg mutton or lamb cut into pieces
3 tbs oil
1cinnamon stick
3 green cardamom pods
4 cloves
1 bay leaf
3/4 tsp fennel seeds
3 curry leaves

1 tsp ground coriander
1 green chillies, slivered
1 onion, chopped
3/4 tsp turmeric
2 tsp crushed ginger
2 tsp crushed garlic
2 tsp brown vinegar
1 tsp sugar
1 tsp garam masala
2 -3 level tblsp medium hot mixed masala
3 ½ cups water
80ml cup tomato purée
1 tomato, chopped
3 large potatoes, peeled & cubed

1/3 cup chopped fresh coriander
Salt to taste
1 loaf of fresh white bread, unslice

Method


  • Heat oil in a large saucepan and ddd cinnamon, cardamom, cloves, bay leaf and fennel and stir.
  • Add curry leaves, ground coriander, chilli, onion, turmeric, ginger and garlic and saute for 4 –5 minutes.
  • Mix the vinegar, sugar, garam masala and mixed masala in a bowl, add this to the saucepan.
  • Add the meat and mix until meat is coated with masala.
  • Cover saucepan and cook on moderate heat until meat is well braises and oil starts to float on the surface.
  • Add the water and continue cooking until meat is tender.
  • Add tomato purée, chopped tomatoes and cubed potatoes
  • When potatoes are cooked and the gravy has been slightly reduced, add the coriander.
Serving Tips:
Cut loaf of bread into quarters. With a sharp knife cut out most of the soft white bread, leaving a thick wall and bottom. Keep the bread you removed. Fill the hole with the mutton curry and place the bread you removed back on top. Bunny chow is always eaten with the hands.
Serve with sambals if desired – and eat messily!

FROZEN STRAWBERRY MARGARITA COCKTAIL

This free Frozen Strawberry Margarita Cocktail Recipe is delicious! The Strawberry Margarita is the most popular of the flavoured Margarita varieties.
 
Ingredients

1 ½ shot tequila
1 shot triple sec
1 shot lime juice
¼ cup frozen strawberries
1 cup ice
1 fresh strawberry to garnish

Method
  • Place all the ingredients into a blender and blend on high until smooth.
  • Pour the contents into chilled margarita glass.
  • Garnish with a strawberry and serve.
Makes 2 cocktails if served in Margarita glasses.

PESTO MINCE & MACARONI BAKE

This free pesto mince & macaroni bake recipe is amazing. The basil pesto adds extra flavour to the mince and the white sauce is made with cream cheese and fresh cream… Mmm delightfully creamy.
 
Ingredients

15ml oil
1 onion, finely chopped
2 cloves garlic, finely chopped
500g lean beef mince
salt and freshly ground black pepper
2 large tomatoes, skinned and diced
1 cup butternut, 1cm cubed and cooked
25ml chutney
50ml basil pesto
3 extra-large eggs, whisked
250g cream cheese
250ml fresh cream
250ml cheddar cheese, grated
extra pesto to serve
350g macaroni


Method
  • Cook the macaroni in boiling salted water until al dente, drain and set aside.
  • Heat the oil in a large saucepan, fry the onion and garlic for a few minutes until fragrant.
  • Add the mince and fry until done.
  • Season the mince mixture with salt and pepper, add the tomatoes, butternut, chutney and pesto and mix well.
  • Add the cooked macaroni to the mince mixture and mix well and place a large greased oven dish.
  • Whisk the eggs, cottage cheese and cream together and pour it over the mince mixture.
  • Sprinkle the cheddar cheese on top and bake in a preheated oven at 180 °C for 20-25 minutes or until heated through and the cheese has melted.
  • Serve with a dollop of extra pesto and a fresh green salad.

CREAMY COCONUT CHICKEN TIKKA

This free creamy coconut chicken tikka recipe is so divine… the coconut milk and yoghurt make this chicken dish super creamy.

Ingredients

15ml olive oil
1 tsp crushed garlic
1 chilli, finely chopped (optional)
4 chicken breast fillets, cut into strips
salt and freshly ground black pepper
50g tikka paste

50g tomato paste
1 can (410 g) coconut milk
125ml yoghurt
1 bunch fresh coriander leaves, chopped
jasmine rice to serve


Method
  • Heat the olive oil in a large saucepan and fry the garlic and chilli for a minute or 2.
  • Add the chicken strips and fry for a few minutes until golden brown.
  • Season with salt and freshly ground black pepper and add the tikka paste and fry a little.
  • Add the coconut milk and yoghurt and bring the mixture to the boil.
  • Reduce the heat and simmer for about 15 minutes or until the sauce thickens slightly.
  • Stir in the coriander and serve with jasmine rice and garnish with a little coriander.
Serving suggestions: Great to serve as a rotti filling as well.

GUAVA SURPRISE

This free guava surprise dessert is absolutely heavenly… Once you try this dessert there will be no turning back you will be hooked for life:) 

Ingredients

1 can (410 g) guavas in fruit juice, roughly chopped
1 can condensed milk
80ml lemon juice
50g white chocolate, grated


Method
  • Divide the pieces and the juice among 4 sundae glasses
  • With a whisk beat the condensed milk and lemon juice together for about 5 minutes, until the mixture begins to thicken.
  • Spoon the mixture over the guavas and chill for about an hour until the dessert is firm and set.
  • Sprinkle with grated chocolate and serves.

Ingredients

2 banana’s chopped
300g frozen low fat plain or vanilla yoghurt
2 tsp of honey
300ml low fat milk
2 pinches of ground cinnamon


Method
  • Place all ingredients (except the honey & cinnamon) into your blender and blend until smooth.
  • Add the honey and give it a quick whizz to blend the honey in.
  • Pour into glasses and sprinkle cinnamon on top.

CURRIED MINCE

This delicious free curried mince recipe is a quick and easy dish to make after a long day’s work. This recipe is made with lean mince and vegetables… great for the whole family.

Ingredients

15ml oil
1 garlic clove, finely chopped
1 onion, halved and sliced
5 – 10ml curry powder
250g lean beef mince
salt and freshly ground black pepper to taste

1 - 2 carrots, peeled and diced
½ cup frozen peas (optional)
2 potatoes, peeled and diced into 1cm cubes

150ml beef stock
30ml hot chutney
30ml tomato paste
fresh parsley to garnish

Method
  • Heat the oil in a frying pan and fry the garlic and onion until soft and fragrant.
  • Add the curry powder and stir-fry for a few minutes.
  • Add the mince to the onion and garlic and brown.
  • Add the potatoes, carrots, beef stock, chutney and tomato paste and simmer on a low heat for 10 – 15 minutes, until the potatoes start to soften.
  • Add the peas and simmer for a further 5 – 8 minutes until peas are cooked through.
  • Season with salt and ground black pepper.
  • Garnish with parsley.
Serving suggestions: May be served with rice or pasta, as a rotti or baked potato filling.
