6 MINUTE CHOCOLATE CAKE

Ingredients

Cake
250ml cake flour
250g sugar
20ml baking powder
Pinch of salt
250ml hot water
50ml cocoa powder
5ml vanilla essence
30ml white vinegar
Icing
125ml icing sugar
15ml boiling water
15ml cocoa powder
7ml instant coffee
125ml low fat cottage cheese
550ml icing sugar, sifted extra
50ml cocoa powder extra
125g butter, softened
5ml vanilla essence
Method
Cake
  • Combine the first 4 ingredients.
  • Blend the remaining ingredients together and add to dry ingredients, mix well.
  • Lightly grease a deep 20mm diameter microwave cake pan, line the base with a double layer of paper towel. Pour in the mixture.
  • Microwave on high for 6 – 8 minutes or until no longer wet at the top.
  • Allow to cool completely and turn out on a wire cooling rack.
  • Make the second cake in the same way and sandwich them together with jam or a layer of icing.
Icing
  • Combine icing sugar, boiling water, cocoa and coffee, mix well and allow to cool.
  • Beat in the cottage cheese and set aside.
  • Sift together extra icing sugar and cocoa powder into a bowl, beat in the butter and vanilla essence until smooth and creamy.
  • Gradually beat in the cottage cheese mixture to make a smooth spreadable consistency.
  • Spread icing of the top and side of cake.
  • Garnish with a flake (Optional).
